All the levels heat pretty evenly although sometimes I do have to rotate the trays about half way through. They are made to let the air flow to all the trays evenly. As for juices dripping.... uhmmm...scratch that. For things that might leak they make what they call fruit leather trays. Basically it's just a tray on a tray. As for keeping foods for long term storage drying is an excellent choice. You'd want to use O2 absorbers or a vacuum sealer to remove the oxygen. Store your dried foods in a cool dark place and you can dry most anything.
